Keto Chaffle recipes rocked the internet and everyone on a ketogenic diet last summer with two sweet and savory 2-ingredient keto chaffle recipes that make simple low carb bread alternatives.

Obviously, the moment I read about chaffles, I dove right in and started asking the hard-hitting questions like Where on Earth did Keto Chaffles Come From? And Why Didn’t I Think of That?

What Is a Chaffle? What Does Chaffle Mean?

So chaffles have been a thing for years – the first chaffle was served in a South California taco shop – Seabirds Kitchen back in 2015. It was the vegan restaurants take on a churro – waffle combination. In case you’re wondering, they are nowhere near low carb. 

Cut to May 16, 2019, when Utah keto enthusiast Kiana Fonua Williams posted a photo captioned “Easy Cheesy Waffle Omelets” on Instagram – with the cheddar cheese recipe and simple directions. How she only got 977 likes for her discovery? Beyond me. 

I suppose we need to give Ketomadmananother Utah resident – mad props as he appears to be the guy that started the #chaffle madness we have today. (He added the hashtag – genius:)

What Is A Keto Chaffle & How Do You Make One?

Chaffles are the ultimate easy keto breakfast, bread, snack, or dessert, and you only need two common ingredients to make them: eggs and cheese. And yes, I know this may not sound like a delicious combination, but I’m telling you – don’t knock it before you try it!

Sweet? Savory? How Do Chaffles Taste? 

Chaffles made with mozzarella topped with butter and sugar-free syrup taste like a waffle. No, really. I gave one to my husband (the picky eater who is not on any diet), and he looked at me like I was a magical unicorn kitchen fairy. Which is a good thing – in case you’re wondering.

We’re going to kick off this chaffle-palooza with the two most basic keto chaffle recipes (sweet and savory) and move our way into more”advanced” territory with a few chaffle recipes with almond flour, cream cheese, blueberries, and cinnamon.

There are two ways to make the basic keto chaffle recipe – and both are fabulous without doing anything extra. Add a few herbs, spices, or swap cheeses, maybe add a little almond flour – and it’s ON. Let’s start with the basics.

What You Need To Make Chaffles Happen

The only thing you need to make chaffles is a mini waffle iron, eggs, and cheese. The waffle iron is available on Amazon for less than $15 – and well worth the investment. It’s ok if you’re skeptical – When I got the news about chaffles last summer, the idea of eggs and cheese in waffle form did not sound appetizing, even to me -)I’ve been following a keto diet for seven years!) But I tried them, and I fell in chaffle love. I suspect you will too.

Why Would You Use A Mini Waffle Maker?

You can make a 4-inch chaffle in 4 minutes in a Dash Mini Waffle Maker, which is the perfect size for making chaffles into “buns.” 

Another selling point for going mini is you can reheat them in the toaster like an Eggo – which isn’t a possibility with a full-sized chaffle. But there are other options for reheating – the oven, a toaster oven, microwave, or air fryer. 

How Do You Make Regular Sized Chaffles?

By the way: I made my first chaffle in a (GASP) standard sized waffle iron because I did not want to wait for Amazon Prime to deliver my Dash mini iron. If you’re in the same boat, use what you have. I made chaffles happen in my standard-size waffle maker with 2 eggs + 1 cup cheese.

Don’t Forget Syrup

I use this sugar-free maple syrup – you won’t need it for the bread or dessert chaffles, but for breakfast, it is practically mandatory. 

Can You Freeze Keto Chaffles?

Absolutely! Chaffles are 100% freezer-friendly! To freeze, place your chaffles in an airtight container or a freezer bag separated with wax paper, so they don’t stick together. They’ll last up to 3 months. Defrost in the microwave or in your air fryer set at 300 for 2-3 minutes.

2 Basic Keto Chaffle Recipes

Mozzarella Base Chaffle: 1 Egg + 1/2 Cup Mozzarella Cheese

To me, the mozzarella base chaffle is a bit sweeter than the cheddar version, so if you’re looking for a close to the real thing waffle for breakfast or a dessert chaffle, I’d recommend going this route. 

In a small bowl, whisk the egg and mozzarella cheese together. Place half of the mixture into a mini waffle maker for 2-3 minutes. Repeat with the remaining batter. For a chaffle with a more bread-like texture, add one teaspoon almond or coconut flour.

Savory Cheddar Cheese Chaffle: 1 Egg + 1/2 Cup Shredded Cheddar

The original chaffle recipe uses cheddar – which we think gives it a more savory flavor – making it our bun swap of choice. See the Parmesan Garlic recipe below. For a bread swap for breakfast or lunch sandwiches or a bread replacement to go with dinner, I’d go with the cheddar version. 

Tip: To make extra crispy sprinkle the waffle iron with cheddar cheese before adding batter.

But here’s the thing – they are so easy to make it wouldn’t hurt to try both – I swear you can’t mess this up – unless you’re me. I have a gift. 

My Chaffle Fail 

Yes, my first attempt at blueberry chaffles was an epic fail. And a mess. Live, learn, and chaffle on, right? Look the take-home point is if you’re trying blueberry chaffles smash the berries first if you’re mixing them into the “batter” OR carefully place them on top before you close the iron. And don’t overfill:)

Blueberry Chaffle (Chaffle Recipe with Cream Cheese + Almond Flour)

The easiest way to make a blueberry chaffle aside from smashing the berries (or throwing them in a food processor) is just adding a tablespoon blueberries to the mozzarella base.
You could also add a tablespoon of cream cheese, ½ teaspoon vanilla, and a tablespoon blanched almond flour for more of a cake-style dessert chaffle. Macros for the blueberry are as follows:

Remember to use sugar-free maple syrup, or you’ll blow your macros!

5 Minute Parmesan Garlic Chaffle Bread 

Prep Time: 2 Minutes, Cook Time: 3 Minutes,Yield: 2

Here’s my favorite savory twist on the basic cheddar and egg chaffle. Think of them as your go-to swap for garlic bread.
Or use them as sandwich bread
Or dip them in sugar-free marinara sauce for a snack or appetizer.
You can add bacon, top with chives or green onions, and a dollop of cream cheese instead of butter.

Strawberry Cake Chaffle

The Strawberry Chaffle is more of a dessert using the mozzarella base and the addition of cream cheese and almond flour. Top it off with a few more strawberries and a little 2-ingredient low carb whipped cream to make it extra fabulous!

  • 1/2 Cup Mozzarella Cheese

Savory Cheddar Chaffle Recipe 

  • 1 Egg
  • 1/2 Cup Cheddar Cheese

Blueberry Chaffles 

  • 1 Egg
  • ½ cup mozzarella cheese
  • 1 tablespoon blueberries 
  • 1 tablespoon cream cheese (optional) 
  • 1 tablespoon almond flour (optional) 
  • ¼ teaspoon baking powder (optional) 

Parmesan Garlic Chaffles

  • ½ cup mozzarella
  • 1 egg
  • 3 tablespoons grated parmesan cheese
  • 1 minced garlic clove or ¼ teaspoon garlic powder 
  • ½ teaspoon Italian seasoning 
  • ¼ teaspoon baking powder 

Strawberry Chaffle 

  • 1 Egg
  • 1/2 cup mozzarella cheese 
  • 1 tablespoon cream cheese 
  • 1 tablespoon almond flour 
  • ¼ teaspoon baking powder
  • Pinch of salt 
  • 23 sliced strawberries 
  • 1 teaspoon strawberry extract 

 

Cinnamon Chaffles 

  • 1 egg
  • 1 cup mozzarella cheese
  • 1/2 teaspoon vanilla 
  • 1/2 teaspoon cinnamon 

Buttered Cinnamon Bun Chaffle with Cream Cheese Icing 

Ingredients for Cinnamon Bun Chaffle 

  • 2 oz (4 tablespoons) cream cheese (room temperature) 
  • 2 eggs
  • 1 Tablespoon Almond Flour
  • 1 Tablespoon melted butter 
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 1 Tablespoon Granular Erythritol or Monk Fruit Classic 
  • 1 Tablespoon Sukrin Gold or Monk Fruit Golden 
  • 1/2 teaspoon cinnamon 

 

Ingredients for Buttered Cinnamon Sugar Swirl 

  • 2 tablespoons butter 
  • 1 teaspoon cinnamon 
  • 2 teaspoons Granular Erythritol or Monk Fruit Classic 

Ingredients for Cream Cheese Icing:

  • 1 Tablespoon cream cheese (softened) 
  • 1 Tablespoon butter
  • 1.5 Tablespoons of Powdered Erythritol or Monk Fruit Powdered 

Instructions

Preheat your waffle iron 

Whisk egg and cheese and add any additional ingredients 

Pour half of the batter into your waffle iron (1/2 cup for standard-sized chaffles, 1/4 cup for mini) and cook for 3-4 minutes. 

Remove from waffle iron and allow it to cool – chaffles get crispy as they cool:) 

To freeze, place your chaffles in a freezer bag separated with wax paper, so they don’t stick together. Defrost in the microwave or in your air fryer set at 300 for 2-3 minutes.  

Notes

Blueberry Chaffles: Combine egg and cheese. Add in optional ingredients and blueberries and place half of the batter into a mini waffle iron. Cook for 2-3 minutes and repeat with the remaining batter.

Garlic Parmesan Chaffles: Turn on your waffle iron and spray it with a little coconut oil or your favorite keto-friendly nonstick spray. (Coconut is my go-to:) Combine ingredients and place half the batter in the mini waffle maker for 2-3 minutes. Repeat with the remaining batter.

Strawberry Cake Chaffles: Whisk the egg, then add in the cheese, cream cheese, almond flour, baking powder, and salt. Place half of the mixture into a mini waffle maker Then carefully place 2-3 sliced strawberries toward the center and cook for 2-3 minutes. Repeat with the remaining batter.

Cinnamon Chaffles: In a small bowl, whisk the egg and mozzarella cheese together. Then add the vanilla and cinnamon. Place half of the mixture into a mini waffle maker for 2-3 minutes. Repeat with the remaining batter.

Buttered Cinnamon Bun Chaffle: (Makes 4) Combine cream cheese, eggs, one tablespoon melted butter, almond flour, vanilla, baking powder, salt, cinnamon, Erythritol, and Sukrin Gold. Set aside. In a separate bowl, combine butter, cinnamon, and two teaspoons erythritol. Microwave for ten-second intervals until butter is melted.

  • Spray waffle iron with keto-friendly cooking spray and add batter, then drizzle the Butter Sugar swirl around on top.
  • Cook 4 to 5 mins
  • For the icing: combine cream cheese, butter, and powdered erythritol and microwave for ten-second intervals until it has a smooth consistency like icing. Drizzle over chaffles and enjoy for breakfast or dessert!
