Today is the 10th of Ramadhan! So it’s time to BAKKEEEEEE FOR RAAYAAA! or you can also bake it for teatime! This cookies is inspired by Onde Onde or in Indonesia, I notice they spell it with “h” Ondeh Ondeh! It is a traditional teatime or breakfast snack!

Since this is an inspired cookies, obviously the texture is different than the real Onde Onde. Other than that it taste the same! The aromatic coconut and pandan make it irresistible! So if you want to impress your guest during Raya, these cookies are the right one!

Gula Melaka, is palm sugar! It’s a type of sugar that is very popular in Malaysia. Melaka is a state in Malaysia. So If you cannot get any GULA MELAKA in your area you can substitute with any hard palm sugar or brown sugar.

  TIPS TO MAKE IT RIGHT
  • Do not use a whisk. We do not want to incorporate any air inside the dough or to form any gluten. This will make the cookies hard.
  • Use superfine flour or biscuit flour or low protein flour. We want as little gluten as possible.
  • Make sure all the ingredients are in room temperature.
  • Preheat the oven before start baking.
  • You can skip the step to put the dough in chiller, as long as its easy for you to handle.

FULL RECIPE

Onde Onde Cookies | Biskut Ondeh Ondeh


Ingredients


  • 200g superfine/low protein flour | 200g tepung biskut/ tepung rendah protein

  • 115g butter | 115g mentega

  • 125 icing sugar | 125g gula aising

  • 1 medium size egg | 1 telur sederhana

  • 1 teaspoon Pandan paste | 1 sudu kecil perisa Pandan

  • 1/2 teaspoon salt | 1/2 sudu kecil garam

  • 30g desiccated coconut | 30g kelapa kering

  • Topping:

  • grated Palm sugar | gula Melaka

  • desiccated coconut | kelapa kering

Instructions


  1. Mix butter and icing sugar until well combined. | Campur mentega dan gula aising sehingga sebati.

  2. Put in egg, salt and Pandan paste, mix well. | Masukkan telur, perisa pandan dan garam, gaul sebati.

  3. Sieve the flour and mix well. | Ayakkan tepung dan gaul sebati.

  4. Combine well desiccated coconut into the dough. | Sebatikan kepala kering ke dalam adunan.

  5. Flatten the dough on a baking paper and let it rest in chiller for 1 hour. | Ratakan adunan di atas kertas minyak dan rehatkan di dalam peti dingin selama 1 jam.

  6. Grate the gula melaka (palm sugar) | Sagat gula melaka.

  7. Flat it with roller pin and cut with any cookies cutter | Ratakan adunan dengan penggelek dan tekap mengikut bentuk kesukaan.

  8. Sprinkle some gula melaka ( palm sugar) on top cookies dough. Taburkan sedikit gula melaka ke atas doh biskut.

  9. Bake for 12-13 minutes in a preheated oven 160C. | Bakar di dalam oven yang sudah di panaskan dahulu 160C selama 12-13 minit.

  10. Sprinkle some desiccated coconut on the cookies while it still hot | Taburkan kelapa kering ke atas gula melaka ketika biskut masih panas.

  11. Let it cool down on a wire grid and keep in airtight container. | Sejukkan di atas redai dan simpan di dalam bekas kedap udara.
