Strawberry Bread with Frozen Strawberries

Strawberry Bread with Frozen Strawberries is an easy quick bread with incredible strawberry flavor. The thawed strawberries give it a moist texture, and the easy strawberry glaze is sweet and flavorful. You’ll want to eat this for breakfast, dessert and every meal in between.

Strawberry Bread Recipe:

I love quick breads. You name it, and I’ll bake it and eat it. Zucchini Bread, Rhubarb Bread, Pumpkin Bread, Banana Bread, Chocolate Zucchini Bread, Pepperoni Bread and Cinnamon Swirl Bread are all my favorites. So when I found this recipe for a strawberry quick bread using frozen strawberries, I knew I had to try it.

You can find frozen strawberries in the freezer section of most grocery stores.  Be sure to let them thaw before making this recipe.  When you add them to the mixer, and turn it on, it makes the prettiest pink batter.

I decided to take this a step farther by adding a strawberry glaze.  It is the icing on the cake, literally and figuratively. The glaze is really a traditional recipe with the addition of your favorite strawberry jelly or preserves.  This recipe makes to 2 loaves of strawberry quick bread.  Share one with a friend, or wrap tightly in foil and put in a resealable freezer bag to store in the freezer.  You’ll have breakfast or dessert in a pinch.

How to Make Strawberry Bread with Frozen Strawberries:

Instructions:

  1. Add wet ingredients to mixer and blend until fully incorporated. In a different bowl, lightly mix together dry ingredients.
  2. Slowly add dry ingredients to wet ingredients, just barely mixing between each addition. Add in chopped nuts and mix.
  3. Pour into 2 greased and flours 5 x 9-inch bread pans.
  4. Bake at 350 degrees F for 50-60 minutes or until a toothpick comes out clean.
  5. Let cool for 10 minutes in the pan, and then remove from pan and let rest on a wire rack. Let cool before glazing.
  6. For glaze, mix powdered sugar, softened butter, strawberry jam and milk until smooth. Pour over bread and let glaze harden.

  • This strawberry bread using frozen strawberries makes 2 loaves.  If you only need one, wrap the other tightly with foil and then place in a resealable bag and store in the freezer for later.
  • Let the strawberries thaw before making this easy strawberry bread.  Do not drain off the juices; you’ll want them for the bread.
  • The best part of this easy strawberry bread is the strawberry glaze. Use your favorite strawberry preserves or jam to give it an amazing flavor.
  • When making the strawberry glaze, start with 1 Tablespoon of milk, and slowly add more until you get the right consistency.  You don’t the glaze to be too thick or too thin.  If it is too thick, add more milk.  If it’s too thin, add more powdered sugar.

Ingredients

Bread

  • 16 ounces frozen strawberries, thawed
  • 4 eggs
  • 1 1/4 cup oil
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups sugar
  • 1 cup chopped nuts

Glaze

  • 1 cup powdered sugar
  • 1 Tablespoon butter, softened
  • 2 Tablespoons milk
  • 2 Tablespoons strawberry jam or preserves

Instructions

Bread

  • Preheat oven to 350 degrees F.
  • Mix wet ingredients with mixer—thawed strawberries, oil and eggs.
  • In a separate bowl, mix dry ingredients—flour, baking soda, salt and sugar.
  • Slowly add dry ingredients to wet ingredients, just barely mixing in between each addition. Add nuts and mix until just incorporated.
  • Prepare 2 5×9 inch bread pans by greasing and flouring. Pour batter into prepared pans.
  • Bake for 50-60 minutes or until a toothpick comes out clean. Let cool in pan for 10 minutes. Remove to wire rack to cool completely before adding glaze.

Glaze

  • Mix powdered sugar, softened butter, milk and strawberry jam until smooth. Start with a little less milk and add more until you get the desired consistency. Pour over loaves and let glaze harden.
