Air Fryer Crispy Buffalo Chicken Sandwiches

by

If you love buffalo anything, you’ll love these Buffalo Chicken Sandwiches! They are super crispy, spicy and a crowd-pleaser. The perfect fun family meal.

Confession: I love anything buffalo chicken. Sandwiches, wings, dips, wraps, you name it. I had to create this crispy buffalo chicken sandwich and I had to do it in the air fryer because I love air frying almost anything. Check out some of my other air fryer recipes, including Fish Tacos with Mango Salsa and Sweet and Spicy Sesame Wings.

This buffalo chicken recipe is very easy and is customizable to the amount of spice you like and any allergies or sensitivities you may have.

Ingredients

What you need for these air fryer buffalo chicken sandwiches:

  • Boneless, skinless chicken thighs- use chicken thighs for a more tender and flavorful chicken sandwich.
  • Flour- I used all-purpose flour, but gluten-free 1:1 flour will work if you have sensitivities.
  • Onion powder
  • Garlic powder
  • Paprika
  • Eggs– used for an egg wash to help the breadcrumbs stick to the chicken for a nice thick coating.
  • Panko breadcrumbs– use regular breadcrumbs, rice crumbs or gluten-free breadcrumbs, all should work in this recipe.
  • Buffalo sauce– I love the New Primal buffalo sauce because of the clean ingredients, but use your favorite kind.
  • Buns– nothing can top brioche buns in my opinion. I love the ones from Bakerly and Whole Foods. Use gluten-free buns if needed or go without the bun.
  • Tomato– beefsteak, vine tomatoes or hothouse are perfect for this buffalo chicken sandwich.
  • Lettuce– I love green leaf lettuce, butter lettuce or romaine for sandwiches and burgers.

Instructions

Preheat your air fryer or oven to 375 degrees F.

Set up an assembly line: combine flour in a medium-sized bowl with the spices and mix to combine. Whisk eggs in a separate bowl and add breadcrumbs to their own medium-sized bowl.

Dip a piece of chicken in the flour mixture until it is coated on all sides, then dip the chicken in the egg bowl, again coating on all sides. Finally, dip the piece of chicken in the breadcrumbs and press down until it is fully coated. Transfer to a plate, then repeat the process with the remaining pieces of chicken.

Add chicken to the air fryer basket and spray lightly with cooking oil. Cook for 15 minutes, flip the chicken and cook for another 10-15 minutes until the internal temperature reaches 165 degrees F. (Cooking time will depend on your individual air fryer).

Remove the chicken from the air fryer and put in a large bowl. Pour buffalo sauce on top and toss with tongs to coat the chicken.

How to assemble the sandwiches:

Heat or toast the buns to your liking. Assemble the sandwiches by adding lettuce, tomato and chicken to the buns.

Tips

  • No air fryer, no problem. The chicken can also be made in the oven. Cook the chicken at 375 degrees F for about 30 minutes. Check to make sure the internal temperature is 165 degrees F before serving.
  • Don’t skip the flour. While it may be tempting to skip the flour for a “healthier” sandwich, the chicken won’t be as crispy. I promise it’s worth it.
  • Spray the air fryer basket with oil. Make sure you use cooking spray to coat the air fryer basket before putting the chicken in, otherwise it could stick.
  • Toppings. I love the sandwiches as is, but you can top them with blue cheese dressing or crumbles, ranch dressing or your favorite cheese.
  • How to serve: I love serving these sandwiches with sweet potato fries and a side caesar salad. Other options: regular fries, garden salad, roasted or sautéed vegetables or potato salad.
