  1. In a large skillet, pan fry the shrimp and carrots and peas blend in the skillet with both of the oils for about 3-5 minutes or until soft.
  2. Slide the vegetables and shrimp to the side and pour in the eggs.

  3. Scramble the eggs.
  4. Then stir in the rice, soy sauce, salt, and pepper and mix with the eggs, shrimp and vegetables.
  5. Stir for a few minutes until rice is heated through.
