I am pretty excited about this recipe for No Bake Sugar Free Chocolate Cookies.
That could be because they do not require an oven to make them.
 

No Bake Sugar Free Chocolate Cookies

 
This cookie is for those of us who embrace the idea of ‘no bake’.
Even though these cookies are technically not baked, they really are petty tasty.
 

The usual cookie recipe does include an oven as part of the baking process.
However, this recipe does not include an oven. But, you will need to melt some of the ingredients to get the recipe started.
 

These peanut butter no bake cookies can be made anywhere that you can melt your beginning ingredients.

Hence, this is a great recipe to take with you on the road or when you know there will be a microwave or a campfire.
I would think that this would be a great recipe for a barbecue or campfire as a result.

This recipe does not include eggs in it.
Eggs are what are used in baked cookies to help keep the cookies together.
Also missing from this recipe is flour really of any kind.

 

This is one of the simplest yet, healthy in some ways, cookie recipes that I have ever seen.

I think that the lack of a lot of ingredients is one reason why this recipe is so easy. Also, the lack of a lot of steps to make these cookies make this an easy recipe to follow.

These cookies also travel well.
I have a friend with small kids who love these cookies. She just makes them before they leave town and freezes them away to take with them.

 

This is a peanut butter based no bake cookie recipe.

You can use either smooth or chunky peanut butter depending on whether or not you want those peanut chunks in your cookies.
However, I recommend using peanut butter without sugar in it to keep these cookies sugar free.

There are a few more ingredients that you will need to make these cookies that you may not have on hand.

Unsweetened cocoa powder and sugar free chocolate chips are needed. Also needed are old fashion style of rolled oats.

How to make No Bake Sugar Free Chocolate Cookies

 

  • Start by prepping a cookie sheet with parchment or wax paper. Set this aside while you work.
  • In a saucepan on medium heat, combine together sugar alternative, milk, butter, unsweetened cocoa powder, and sugar free chocolate chips. Bring this to a boil stirring as it heats. Be sure to scrape the sides of the pan to reduce sticking. Once the ingredients begin to bubble, wait one minute and then remove the pan from the heat.
  • Stir in the remaining ingredients, one at a time. Then use a teaspoon to scoop the batter and drop it onto the prepped cookie sheet from the first step. This should harden at room temperature within 45 minutes. Store the cookies in your refrigerator or freeze to take with you later on.
