Quiche is one of those brunch foods that really takes your breakfast to the next level. Everyone tends to think you spent hours in the kitchen slaving away, when in reality, it’s really simple to make.

For this healthy quiche, we used ingredients like spinach, turkey bacon, mozzarella cheese, onion, almond milk, and of course, Eggland’s Best eggs to create a variety of delicious flavors. The saltiness from the bacon, the creaminess from the cheese, and the fluffiness from the eggs makes this quiche stand out above the rest.

Ingredients in spinach bacon quiche

This spinach and bacon quiche recipe is made in two parts, which means we also have two separate sections of ingredients! For the crust, we’re using almond flour as the base and seasoning it with garlic, salt, and pepper. For the quiche center, we’ll use turkey bacon, spinach, lots of cheese, and of course… eggs!

Everything you’ll need to create your quiche

In terms of tools, you’ll need quite a few to bring this dish to life. I like to gather everything before I begin so that everything is at arm’s reach when I need it!

  • Cutting board
  • Chopping knife
  • 9 inch pie dish
  • Medium mixing bowl
  • Mixing utensil
  • Skillet
  • Spatula
  • Large mixing bowl
  • Whisk

For measuring, you will need the following sizes: 1/4 tsp, 1/2 tsp, 1 tbsp, 1/3 cup, and 1 cup.

How to make healthy spinach bacon quiche

Despite that fact that you’re making a quiche from scratch with a homemade crust, the entire thing is ready to go in less than one hour.

To begin, preheat the oven to 350F and grease a 9-inch pie dish.

We’ll start by making a simple almond flour crust. In a medium sized bowl, mix the together all of the crust ingredients until a ball forms.

Press the crust into the pie dish and make sure it’s even all around. Bake for 15 to 20 minutes, or until slightly golden brown. By baking the crust on its own, it prevents any sogginess that may happen if you just baked it raw.

While the crust is baking, sauté the onions and turkey bacon in olive oil on medium-high heat. Once cooked through, add the spinach and cook until wilted. Then, turn off the heat and let cool.

In a large bowl, whisk together the eggs, milk, 1/2 cup of cheese, salt, and pepper.

Then, add the turkey bacon mixture and pour into a slightly cooled crust. It can be warm, but it shouldn’t be hot.

Add the remaining cheese on top and bake for 35-40 minutes, or until no longer jiggly. A knife inserted into the center should come out clean.

Once baked through, let cool for 20 minutes before cutting.

Add ons to try with spinach and bacon quiche

Wondering if you can add your favorite egg or omelette ingredients into this quiche? The answer is probably yes! Here are some extra ideas:

  • Green or sweet peppers
  • Mushrooms
  • Broccoli florets (chopped very small)
  • Cheedar cheese
  • Pepperjack cheese

Side note: If preferred, you can use your favorite type of “regular” bacon as a sub for the turkey bacon. However, I promise the turkey bacon in this recipe is downright mouth watering.

How to store leftover quiche

Leftover quiche is best stored covered in foil and kept in the refrigerator. I leave it in its pie dish, but you can also move it to Tupperware if you prefer. When ready to heat, microwave for a few seconds until warm.

Feel free to freeze individual portions and defrost and reheat as needed.

Ingredients

Crust

  • 2 cups almond flour
  • 1 tbsp minced garlic
  • 1/3 cup olive oil (or butter)
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp water

Quiche

  • 1 tbsp olive oil
  • 8 oz turkey bacon, diced small
  • 1 small red onion, diced small
  • 1 5oz bag fresh spinach, roughly chopped
  • 6 Eggland’s Best eggs
  • 1 cup unsweetened almond milk (or milk of choice)
  • 1 cup cheese, divided
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Preheat oven to 350F and grease 9-inch pie dish.
  2. In a medium sized bowl, mix together all crust ingredients until ball forms.
  3. Press crust into pie dish evenly. Bake for 15-20 minutes or until slightly golden brown.

  7. Add the remaining cheese on top and bake for 35-40 minutes or until no longer jiggly. A knife inserted into the center should come out clean.
  8. Let cool 20 minutes before cutting into it.
