Banana Bundt Cake with Peanut Butter Glaze

by

This easy banana bundt cake recipe is a cross between a sweet banana bread and a sweet banana cake! Topped with a peanut butter glaze, this cake is sure to be a hit!

I’ve decided I’m a big fan of bundt cakes. I mean, just look at that glaze. Who needs cake when there’s a big batch of glaze like that?! (I do. I always need cake.)

It’s a ridiculously easy way to get your cake fix, and considering my love for all things cake (hence my above need), that is a HUGE win in my book.

Perhaps too big of a win, because lately, between this and this, three more upcoming cake recipes (I’m obsessed), and taking a trip to Dots, there really hasn’t been a day where cake hasn’t been around.

It’s not the worst problem in the world.

Peanut butter and banana is a perfect match. A real love connection, if you will.

They go together like milk and cookies, mint and chocolate, and hot chocolate with marshmallows.

Like I mentioned earlier, to get this peanut butter and banana fix, really all you need to do is mix a bunch of ingredients in a bowl, dump them into a bundt cake, and then drizzle the glaze all over.

Easy peasy (no lemon squeezy because lemon would be weird in this).

This cake is a real party.

    cup
    peanut butter
  • 1/2
    tsp
    vanilla extract
  • 1 – 1 1/2
    cups
    powdered sugar

Instructions
Bundt
  1. Preheat the oven to 350 degrees and grease a bundt pan with baking spray.
  2. In a large bowl, cream butter until light and fluffy, about 1 minute. Add in granulated sugar and brown sugar, and beat until well combined. Add in eggs, 1 at a time, beating well after each addition. Set aside.
  3. In a separate bowl, sift together flour, baking soda, cinnamon and salt. Slowly incorporate the dry ingredients into the wet, mixing until just combined.
  4. Add in mashed bananas, sour cream, and vanilla extract. Mix until combined.
  5. Pour batter into the bundt pan and bake for 45-50 minutes, or until the cake is golden brown and cake tester comes out clean.
Glaze
  1. With a mixer, beat peanut butter until light and fluffy, about 1 minute. Add in powdered sugar, beginning with 1 cup. Add in vanilla extract and and 2 Tbsp of milk, beating until well combined. If glaze is too thin, add in the last 1/2 cup of powdered sugar. If it’s too thick, add in the last tablespoon of milk.
  2. Pour glaze over the cake, allow to harden (about 5-10 minutes) and enjoy!
